Apple Curry Chicken

2 tbsp. butter
2 tbsp. flour
2 cups heavy cream
2 chicken bouillon
½ cup coconut milk
1 tsp. curry
4-5 boneless, skinless, pieces of chicken, cubed
2 cups apple slices
½ chopped sweet onion

Over medium heat melt butter and add flour, mixing to create a roux. Add cream, bouillon, coconut milk, and curry until the mixture boils and thickens. Place uncooked chicken in a buttered baking dish and cover the chicken with the sliced apples and chopped onion. Pour curry sauce over all and cover. Bake 45 minutes at 350 degrees. Serve over hot cooked rice.
